Kiwi Fruit Melon Salad

You can easily double or even triple this recipe and pass it around the room at any potluck supper.

3/4 cup mayonnaise

2 tablespoons sugar

3 tablespoons fresh squeezed lemon juice

1/3 cupshredded sweetened coconut

1/2 teaspoon salt

1 cup honeydew melon balls or ( you can cut in to bite size pieces )

1 cup watermelon balls or ( you can do the the same as above )

4 kiwi fruit, peeled and sliced

1/2 cup chopped walnuts

In a large bowl combine the mayonnaise, sugar, lemon juice, coconut and salt.

Gently add the kiwi fruit and melon to the mayonnaise mixture.

Toss lightly to coat evenly.

Cover tightly  and refrigerate until well chilled.

Serve on cold plates, sprinkled with a bit of the chopped walnuts.
